Abstract

PROBLEM TO BE SOLVED: To provide a lycopene composition of high lycopene content having high safety, a method of producing the same and use thereof in health food, food additives, medicines, cosmetics and animal feed. SOLUTION: A lycopene composition that includes lycopene in an amount of >=9 wt.% on the anhydrous basis and is perfectly free from other residual solvent than ethanol which is used in the production process. This lycopene composition is prepared by subjecting tomato treated product to centrifugation, microfiltration and ethanol fractionation and drying and pulverizing the resultant lycopene-including liquid, washing the powder with 30-100 vol.% ethanol, then removing the solvent. The lycopene composition is useful as a starting material for health food, food product, food additive, medicine, cosmetic or animal feed.

2. Description of the Related Art Lycopene has a molecular formula of C 40 H 56 and a molecular weight of 53.
6.88 is a fat-soluble natural carotenoid. For example, when lycopene is extracted from tomato fruit, an organic solvent such as hexane, ethyl acetate, dichloromethane, or petroleum ether is often used. Hei 10-509590, JP-A-2000-10373
3) In terms of safety and health, it is not desirable to use these solvents in the production process, and thus, the use of the purified lycopene formulation in the food field has been limited. Also, the lycopene composition prepared from the use of only a solvent that is desirable for safety and health had a low content as lycopene. For example, Japanese Patent Laid-Open No. 9-1
83914, JP-A-10-324816 and U.S. Pat.
The examples 871 and 574 disclose a method for producing a tomato pigment (pasty lycopene composition) from a processed tomato product, and the lycopene content in these pasty lycopene compositions is about 0.5-1. 0.0%. Because of its low content, its use and processing characteristics were limited, making it difficult to use it satisfactorily. On the other hand, lycopene purified with an organic solvent other than ethanol has a high lycopene content, but there is a problem in terms of safety and hygiene such as a problem of a residual solvent, and there are also legal problems. Is receiving. Furthermore, since purified lycopene of this type is generally fat-soluble and insoluble in water, it has not been easy to use it in water-based health foods, foods, food additives, pharmaceuticals, cosmetics, and animal feeds.

DISCLOSURE OF THE INVENTION The present invention has a good water dispersibility and stability without using an organic solvent (for example, hexane, ethyl acetate, dichloromethane, petroleum ether, etc.) which is not preferable for safety and health. An object of the present invention is to provide a method for producing a high-purity lycopene composition, and to provide uses for health foods, foods, food additives, pharmaceuticals, cosmetics, and animal feeds.

Means for Solving the Problems The inventors of the present invention have conducted intensive studies in order to improve the disadvantages of the prior art, and as a result, the processed tomato products have been obtained by the conventional methods (Japanese Patent Laid-Open Nos. 9-183914 and 10-3).
Lycopene-containing liquid (lycopene content: about 0.5 to 1.0%) obtained by treatment according to the method described in 24816)
Is dried, washed with ethanol, partially purified,
It has been found that by removing the solvent, the content of lycopene can be significantly improved without using an organic solvent that is not preferable for safety and health, and thus completed the present invention.

Any material may be used as long as the tomato fruit is a raw material. For example, a tomato juice obtained by washing a fresh tomato fruit by a conventional method, crushing, heating to 65 ° C., and squeezing with a finisher equipped with a 0.5 mm screen. The lycopene liquid used in the present invention has an increased lycopene content obtained by further processing the processed tomato product. For example, a liquid obtained by reducing the viscosity by disintegrating the plant tissue in the processed tomato product by enzymatic activity such as pectolyase and then performing microfiltration on the retentate side. This liquid is a lycopene liquid containing 0.5 to 1.0% by weight of lycopene.

The drying method used in the present invention is not particularly limited as long as the lycopene liquid can be dried. For example, a drying method using a rotary evaporator, a spray drying method, a freeze drying method, etc.
A drying method using microwave irradiation and a heating drying method using far infrared rays can also be used. However, from the viewpoint of the temperature and time of drying, the effect of the shape of the dry powder on lycopene, the shape of the dry powder itself, color tone, stability, etc.
Microwave irradiation drying and far infrared heating drying are more desirable.

[0008] The concentration of ethanol used in the washing and partial purification of ethanol in the present invention can be used within a range of 10 to 100% by volume, and particularly preferably 50 to 90% by volume from the viewpoint of improving the lycopene purity. . The amount of ethanol used is 0.5 times or more based on the weight of the dry powder, and a range of 2 to 50 times is particularly desirable from the viewpoint of improving lycopene purity and cost. The washing temperature may be any number as long as the ethanol solution does not freeze or boil. The cleaning time varies depending on conditions such as the cleaning temperature, but is generally in the range of 1 second to 24 hours. As a washing method, lycopene powder may be put into a tank containing ethanol and washed by a batch method in which stirring is performed, and an ethanol solution is continuously put into, contacted with, and passed through a lycopene powder set in a column or on a filter. Or a washing method in which lycopene powder is allowed to pass instantaneously in an ethanol solution. The number of washings can be as many as one to as many times as necessary. However, if washing with an ethanol solution is repeated more than ten times, the content of lycopene may be reduced. Good for improving lycopene purity.

The lycopene composition after washing removes residual ethanol and moisture. Examples of the method include natural drying, drying under reduced pressure, and a method using a desiccant, and these may be combined. The resulting lycopene composition can be crushed as needed. It can be prepared from fine powder to coarse powder for each application. The obtained powdery high-content lycopene composition may be sealed in a light-tight seal for the purpose of preventing deterioration and distributing, and may be enclosed with an oxygen scavenger.
