Abstract

يتعلق الاختراع الحالي بعبوة غذائية food package تتكون من وعاء container به طبقة علوية محكمة الغلق sealed top layer وتتكون من حمص طازج fresh hummus لا يحتوي على مواد حافظة no preservatives وله مدة صلاحية تصل إلى 28 يومًا عند تخزينه في درجة حرارة 2 درجة مئوية إلى 8 درجات مئوية ، كما هو محدد بالمحتوى الكلي للخميرة total yeast والفطريات mold والتي تكون أقل من 10 وحدات تكوين المستعمرة CFU / جرام لمدة تصل إلى 28 يومًا. تشتمل العبوة package على فراغ رأسي headspace بين الحمص الطازج fresh hummus وطبقة الغلق العلوية top sealing layer، ويشتمل الفراغ الرأسي headspace على جو معدل modified atmosphere وغني بالنيتروجين nitrogen rich، مثل 70% نيتروجين و30% ثاني أكسيد الكربون.
