Description
Descrizione dell’invenzione industriale avente titolo: Description of the industrial invention entitled:
PROCEDIMENTO PER LA PREPARAZIONE DI PRODOTTI CASEARI. PROCEDURE FOR THE PREPARATION OF DAIRY PRODUCTS.
The present invention refers to a process for the preparation of dairy products. In particular, the present invention relates to a process for the preparation of cheese, for example hard cheese with unpressed and uncooked paste.
For cheese or cacio we define the product obtained from milk, following acid or rennet coagulation, also obtained by making use of enzymes and cooking salt. The process on which the manufacturing of the cheese is based is the coagulation of casein, called curd, which incorporates calcium, phosphorus and fatty substances, and the consequent separation of the whey, an aqueous substance that contains some proteins, sugar and mineral salts. The breaking of the curd has the purpose of facilitating the removal of the whey; the degree of breakage determines the type of cheese: the smaller the pieces formed, the greater the quantity of whey eliminated and the drier and harder the cheese obtained. To obtain even harder pastas, the curd is heated and we therefore speak of semi-cooked or cooked paste cheeses, since the heat facilitates the separation of the whey from the clot. The curd is then put to rest in the molds and subsequently salted and seasoned. These latter operations are different for each type of cheese.
In the context of these types of procedures for the preparation of cheeses, the present invention proposes a process in which some peculiarities are distinguished with respect to the processes currently used and determine an improvement of the process from an industrial point of view, as well as a significant improvement the quality of the product, also obtained by mixing the product itself with other ingredients not derived directly from milk.
An aspect of the present invention relates to a process for the preparation of dairy products having the characteristics of the attached claim 1.
The characteristics and advantages of such a process will be better clear and evident from the following description of an embodiment of the present invention, in which the most significant process parameters will be identified.
The basic ingredients to carry out the process are essentially raw milk, which after being suitably filtered and controlled from a chemical-physical point of view, is mixed, in variable proportions depending on the type, in order to have a fat and protein content. falling within the production standards. Subsequently, a heat treatment takes place consisting of a pasteurization at a temperature between 72 and 76 ° C, which has the purpose of reducing the bacterial load present and at the same time destabilizing a certain amount of whey-proteins that will contribute to giving the typical flavor to the product.
Then, the milk is placed in special coagulation boilers at a temperature preferably between 30 ° C and 45 ° C and suitably added with a mixture of lactic bacteria selected from lactobacillus elveticus, streptococcus lactis and streptococcus cremoris. These lactic bacteria are able to bring the degree of acidity (PH) of the pasta, in the first 24 hours, between 4.50 and 4.90 with a consequent demineralization of the same and formation of a characteristic aroma.
After a rest of between 30 and 90 minutes, liquid calf rennet with a title of 1- 10,000 and having a ratio between chymosin and pepsin of 75/25 is added, in a quantity between 20 and 40 cc per 100 liters of milk. , in order to have a setting time of 25-55 minutes.
The breaking of the clot or curd takes place, for example, by means of a tool called lira, which manages to reduce the size of the clots to the size of a hazelnut. The next operation consists in stirring it for about 20-45 minutes, until the desired consistency is obtained. At this point the manual molding takes place, in special baskets of plastic material, with a characteristic design that allows a very rapid purging and which have the purpose of regulating the subsequent acidification.
After the first 15 minutes, the first manual turning takes place with subsequent leveling of the wheels and permanence in a hot chamber for the entire subsequent fermentation period at temperatures between 15 and 35 ° C. In this phase, at least 5 manual turns are performed.
At the end of the stewing which lasts an average of 18-24 hours, the cheeses are placed in a cold cell at 5-8 ° C for the following 24 hours, in order to block the lactic fermentations and prevent the superficial mycotic development as well as to complete the serum purge.
Salting takes place first in brine saturated with salt for a time of 36 hours, followed by a light dry salting and subsequent stay in the cell for a period of 24-96 hours. Maturing is carried out in special air-conditioned natural cellars at an altitude of about 1000 meters. The wheels are placed on wooden boards at a temperature between 5 and 8 ° C and a relative humidity of 70-90% and turned over weekly for a period of 4-6 months, in which there is a deacidification of the dough. following proteolysis and a reduced lipolysis with superficial development of characteristic and natural molds, present exclusively in the microclimate of aging, capable of distinguishing the cheese in an unequivocal and irreproducible way.
Once the paste has a humidity of between 30 and 35% and a degree of acidity (PH) higher than 5, the wheels pass to the refinement phase after cleaning with exclusively mechanical means.
Aging takes place by packaging the cheeses in a special food-grade plastic wrapper, where an environment with a very low quantity of oxygen and other atmospheric gases is created, at a temperature between 2 and 6 ° C. This anaerobiosis has the purpose of directing the proteolysis and lipolysis processes selectively, creating very characteristic tertiary aromas. This process can take up to one year and give the possibility of having a valuable raw material, which allows further processing that can be obtained exclusively with this product.
Normally the cheese at the time of consumption is combined with different flavoring products, in order to create a synergy between the two that can give a balance of flavors by contrast or similarity (pears, dried fruit, honey, jams, wines, spirits such as for example grappa or whiskey, black pepper and pink berries together, chamomile flowers, tobacco leaves, chestnut leaves, barley malt etc ...). In this way, there is only a mix of flavors that can give rise to certain organoleptic sensations. Furthermore, in some cases it is possible to mix the cheeses with non-food ingredients and mixable as the previous ones, such as a mixture made with hay that is wrapped around the cheese and vacuum-packed for the first part of the maturation.
Unlike what happens in the traditional processes according to the present invention, the cheese is not exclusively "flavored", but changes are triggered at the molecular level with the formation of different substances, as conditions of refining are created that direct the maturation processes with formation of aromatic substances.
In the process according to the present invention both products (cheese and flavoring elements) undergo an evolution which guarantees a final result never obtained before. The prolonged stay means that these processes are particularly complex.
The process in one embodiment provides for flavoring products based on dehydrated fruit to be brought into contact with an alcoholic distillate, for example by immersion.
A suitable alcoholic distillate is Muscat grappa or whiskey.
A suitable flavoring product are also the pomace of Nebbiolo from Barolo.
The fruit-based product is left to macerate in the alcoholic distillate for a predetermined period.
The fruit-based product absorbs the alcoholic distillate by osmosis. Subsequently, the cheese is sprinkled with the fruit-based product and the two parts are held firmly in contact, for example by vacuum, so that the interaction between the two parts is maximum and in the absence of oxygen. This contact period lasts on average from 2 to 4 months.
The following example describes in detail the above procedure for whiskey and barley malt.
The malt is left to macerate in whiskey for a period ranging from 24 to 48 hours at a temperature of about 8/10 ° C.
This procedure has the purpose of making the distillate absorb by osmosis from the malt which will then slowly release it by contact with the cheese. The cheeses are then removed from their vacuum packaging and sprinkled with the mixture obtained.
Finally, a certain amount of pure whiskey is sprinkled directly on the cheeses.
A suitable example of the above in weight percentage is the following.
In proporzione la quantità à ̈ la seguente: In proportion the quantity is the following:
Formaggio a quarti kg. 1,65 87,7%. Quarter cheese kg. 1.65 87.7%.
Peso del malto kg. 0,083 < 7,5%. Malt weight kg. 0.083 <7.5%.
Peso del whisky kg. 0,0553 < 4,8%. Whiskey weight kg. 0.0553 <4.8%.
The following example describes in detail the process indicated above for fruit, for example raisins, apricots, figs or plums and muscat brandy which is one of the preferred examples of embodiment of the present invention.
This procedure has the purpose of making the fruit distillate absorb by osmosis which will then slowly release it, by contact with the cheese. The cheeses are then removed from their vacuum-packed wrapping sprinkled abundantly with dried fruit soaked in grappa with a layer of about 2 cm. on the surface of the cheese itself.
A suitable example of the above in weight percentage is the following.
In proporzione la quantità à ̈ la seguente: In proportion the quantity is the following:
Formaggio a quarti kg. 1,65 93,43 %. Quarter cheese kg. 1.65 93.43%.
Frutta secca < 20% Dried fruit <20%
Grappa di moscato < 7%. Muscat grappa <7%.
Successivamente si procede ad una nuova sottovuotatura. Subsequently, a new under-emptying is carried out.
Alternatively, it is possible to use a "paste", obtained by chopping dried fruit and grappa, a very similar final effect would be obtained. Similarly, chamomile flowers can be used instead of dried fruit.
In a further embodiment, the cheese is added with chestnut leaves, tobacco, or with black pepper and pink berries. In these processes, after maturing for about 1 year, the cheese is wrapped in these leaves or mixed with pepper and berries and stored under vacuum in suitable packaging for food use.
