BIRRA E RELATIVO METODO DI BIRRIFICAZIONE BEER AND RELATIVE BREWING METHOD
Descrizione Description
Campo di applicazione Field of application
The present invention finds application in the technical sector of food and particularly relates to beer and the relative brewing method.
Stato della tecnica State of the art
As is known, beer is one of the oldest alcoholic beverages and is obtained following a process (so-called brewing) of cereals or mixtures of cereals such as barley, wheat, corn, rice, spelled, rye or other cereals.
One of the most important phases of the brewing process is represented by fermentation, in which particular yeasts are used to transform the sugars contained in the must.
This operation is usually carried out inside steel vats, which is a neutral material from both a chemical and an organoleptic point of view, from which the beer is directly bottled.
During the brewing process it is also possible to add additional ingredients such as hops, fruit, spices and other aromas in order to balance the aroma of the cereal or give particular characteristics to the final product. For example, from JPH1142076 a beer is known which among its ingredients includes edible gold leaves at 22 carats mixed with beer in the phase between filtration and bottling through a sieve with 3mm <2> mesh.
However, edible gold has an aesthetic purpose only and does not interact with the ingredients of beer to modify its organoleptic characteristics.
Furthermore, the particles are of such size as to be clearly visible and distinguishable from the beer, thus providing evidence of a product that is not perfectly homogeneous.
Presentazione dell’invenzione Presentation of the invention
The purpose of the present invention is to produce a beer which has innovative physical and organoleptic characteristics.
A particular purpose is to make a beer that allows you to exploit the known benefits of gold in a particularly effective way.
Still another object of the present invention is to provide an innovative brewing method which allows to obtain beers having particular organoleptic characteristics and aromatic notes not present in the beers currently on the market.
These purposes, as well as others that will become clearer later, are achieved by a beer in accordance with claim 1 and a brewing method in accordance with claim 6, to which reference should be made for greater conciseness of the explanation.
Advantageous embodiments of the invention are obtained in accordance with the dependent claims.
Breve descrizione dei disegni Brief description of the drawings
Ulteriori caratteristiche e vantaggi dell’invenzione risulteranno maggiormente evidenti alla luce della descrizione dettagliata di alcune forme preferite ma non limitative di esecuzione del metodo in accordo alla presente invenzione, illustrate a titolo di esempio non limitativo con l’aiuto dell’unita tavola di disegno in cui: Further characteristics and advantages of the invention will become more evident in the light of the detailed description of some preferred but non-limiting embodiments of the method according to the present invention, illustrated by way of non-limiting example with the aid of the accompanying drawing table in which:
FIG. 1 is a flow chart of a possible method of carrying out the method according to the invention.
Detailed description of some preferred embodiment examples A beer according to the present invention can be obtained starting from the common ingredients usually used for the production of beer and can provide for the addition of aromas or other raw materials, preferably of natural origin, in order to obtain a certain taste, without particular limitations. With reference to Fig. 1, the brewing process can be carried out in a manner substantially similar to one of the common known techniques starting from a step a) of processing the selected raw materials, usually one or more cereals with the addition of flavoring elements such as hops. , in order to obtain a must.
By way of example, the brewing may include the maltification of cereals, or part of them, followed by the common grinding and roasting phases to proceed with their maceration in water.
These phases will then be followed by one or more further conditioning phases, depending on the type of beer to be obtained, to obtain the must to be fermented with the addition of yeasts.
Phase b) of fermentation can be performed according to common techniques and can be either cold or hot or spontaneous.
The fermented must can in turn be subjected to further conditioning phases c), such as a stabilization phase, a maturation phase in special vats, and further intermediate phases to finally reach phase d) of bottling, with possible preventive filtering.
A pasteurization phase may also be envisaged before bottling.
However, in order to obtain an artisanal product with high organoleptic characteristics in a preferred way, it will be avoided to subject the beer to filtration and pasteurization processes.
According to the invention, before the bottling step d), and preferably after all the various conditioning steps c), there will be a step e) of introducing into the beer thus obtained gold particles having nanometric or submicroscopic dimensions to form a colloidal gold solution.
The gold particles can be introduced directly into the beer or they can already be introduced in the form of a colloidal solution.
The colloidal gold will preferably be obtained from 23 carat edible gold and will be introduced into the beer in such quantities as to have a maximum of 0.5g of colloidal gold per 75cl of beer.
Even more preferably, the weight of colloidal gold present in 75cl of beer will be between 0.1 and 0.3g.
The introduction of edible gold in the form of colloidal gold will allow to have gold particles in suspension uniformly distributed in the beer so as to give the final product a particular brightness and a dry aromatic profile.
Inoltre, si potranno sfruttare in maniera particolarmente efficace le proprietà benefiche riconosciute dell’oro colloidale. Furthermore, the recognized beneficial properties of colloidal gold can be exploited in a particularly effective way.
By way of example, colloidal gold is recognized as a useful catalyst for various diseases such as tuberculosis, multiple sclerosis, sexual dysfunction, degenerative diseases.
In addition, colloidal gold has an inhibitory effect against the growth of tumors and is useful for digestive and circulatory problems, depression, obesity and burns, for the rejuvenation and prolongation of the life of the brain glands. According to a further particularly advantageous aspect of the invention, there is a phase f) of maturation of the beer inside wooden containers, such as barrels or similar, previously used for the maturation of distillates such as whiskey or similar.
This maturation phase f) will preferably be carried out after the fermentation phase b) and subsequently to the possible but not necessary further conditioning phases c) necessary to obtain the beer.
Phase f) of maturation in wooden containers can last between 1 month and 12 months and preferably at least 3 months.
In this way it will be possible to give the final beer the aromas of wood and the delicate fragrances of the whiskey while maintaining an alcohol content typical of beers in order to comply with road safety regulations by not exceeding the threshold of 0.5 grams per liter of alcohol content. after drinking 33 cl of beer. Phase e) of introducing colloidal gold can be performed both before phase f) of maturation with introduction of the beer into wooden containers and only immediately before phase d) of final bottling.
According to an alternative modality, the brewing can foresee the phase f) of maturation in the aforementioned wooden barrels or similar containers in the absence of the phase e) of insertion of colloidal gold, obtaining in any case a beer with wood scents and whiskey fragrances and a alcohol content typical of beers. From the above it is evident that beer and the relative brewing method achieve the intended purposes.
The beer and the related brewing method according to the invention are susceptible of numerous modifications and variations, all of which fall within the inventive concept expressed in the attached claims. All the details can be replaced by other technically equivalent elements, and the materials can be different according to the requirements, without departing from the scope of protection of the present invention.
