Abstract
L'invenzione riguarda un procedimento per preparare prodotti peptidi e/o proteinici arricchiti con amminoacidi leganti in modo covalente. Questo procedimento viene effettuato mediante l'aggiunta dell'amminoacido per incorporare sotto forma del suo derivato attivo alla miscela di reazione contenente la proteina o proteine oppure il peptide o peptidi da arricchire come substrati, in cui la modificazione del peptide enzimatica viene realizzata attraverso la catalisi di proteasi controllata per mezzo dell'enzima proteasi, e il prodotto o prodotti ottenuti all'accesso del derivato di amminoacido vengono rimossi dalla miscela di reazione. Il processo secondo l'invenzione rende possibile il miglioramento del valore alimentare di proteine di alcuni alimenti e prodotti dietetici.
