Abstract
This invention concerns a procedure for packaging seasoned hams in slices. Implementation of the procedure allows a preset number of slices to be obtained from a single seasoned ham, which said slices are very similar in shape, size and weight. The ham., after boning and stitching is maintained, for a preset period of time, at a temperature between +5 degrees centigrade and +10 degrees C. Subsequently, after removal of part of the shackle for about 4-6 cm the ham is subjected to pressing and shaping which gives it an approximately parallelepiped shape. The product formed in this way is cut into slices of approximately the same size and weight.
