Abstract
Food product obtained from fish meat (flesh), processed in order to preserve it and for consumption, which comprises minced (ground) fish meat packed tightly into a sausage casing (intestine) or the like. The fish meat is preferably tuna or bonito. Process for obtaining said food product in which 1 the starting product is fish meat processed in order to preserve it and for consumption 2 said fish meat is crushed until a homogeneous mass is obtained 3 said homogeneous mass is placed in a conventional sausage- making machine 4 pressure is applied to the mass until it emerges via the orifice where the casing is located and 5 the casing with the formed embutido or embuchado (sausage) is removed from said machine. The sausage-type food product has the advantage that it has a compact structure inside the casing used.
