Abstract

1425839 Making chocolate CADBURY Ltd 7 Aug 1974 [17 Aug 1973] 38961/73 Heading A2B Milk chocolate is made by melting sugar, by heating to 370-410‹F and mixing the molten sugar with milk powder, wherein if skim milk powder is used the milk powder/ sugar mix must be additionally heated with milk fat to 240-350‹C, prior to mixing and processing with other chocolate making ingredients to form the chocolate. The sugar is preferably mixed with the milk powder in the presence of a minor amount of reducing sugar and/or cocoa mass. [GB1425839A]
