Abstract

1359666 Milk products SNAM PROGETTI SpA 18 Oct 1971 [17 Oct 1970] 48439/71 Heading A2B [Also in Division C3] A process for the enzymatic scission of lactose in milk or a derivative of milk comprising contacting the milk or derivative of milk with a filament in which is present the enzyme #-galactosidase, the #-galactosidase being present in the filament in a manner such that it can cause the at least partial hydrolysis of lactose and is retained substantially in the filament during hydrolysis. The enzyme may be incorporated in a filament formed from a cellulose derivative or a synthetic polymer. The cellulose derivative may be cellulose triacetate (Ex 1) whilst the polymer may be a polyamide, polyacrylonitrile, a polyacrylate, a polymethacrylate, a polyvinylchloride, a polyvinylester or a polyvinylbutyral. The enzymatic reaction may be intercalated by a washing operation with a detergent which optionally contains a bactericide. The composition produced by the process comprises milk or a derivative thereof, having a reduced concentration of lactose, and an amount of glucose and galactose corresponding to the reduction in lactose concentration, and free or substantially free of enzymatic agent.
