Abstract
The invention relates to bull meat pastirma prepared as follows: 1) dehydration and "baking" of the bull meat with kosher salt under pressure exerted by two pieces of wood, which pieces are progressively tightened to urge the water release from meat; 2) external covering of the bull meat with a red-coloured ointment composed of cumin, garlic, paprika and fenureek; 3) draying of the bull meat by hanging this last in the air, under the sun for a 12-day period there abouts. Alternatively, the invented pastirma can be fumigated for shortening the preparation time. The thus-prepared pastirma is more hygienic than other common kinds thereof.
