Abstract

This invention refers to the wine industry and can be used in production of Kakhetian table wine materials. Technical result is to reduce the terms of preparing wine materials by intensification of the process of polyphenol oxidation and fuller extraction of polyphenolic and aromatic agents. The method comprises crushing grapes, separating crushed bunches of grapes, fermentation, mixing and pressing grape husk and seeds, secondary fermentation of wine material, clarification, decantation, blending, the fermenting being preceded by preheating grape Inisk and seeds which is enriched with oxygen during fermentation. Before the fermentation the final pressure juice previously fermented on the crushed bunches of grapes up to the polyphenol contains from 2 to 3 mg/dm is added to the wine material the grape husk and seeds are heated up to 40-45°C and enriched with oxygen in the amount of 5-10 mg/dm for 24 hours.
