Abstract
Salad oils cloud more slowly, and mayonnaises break less readily, at low temperatures, on dissolving in the salad oil at least 0.001%, and preferably not more than 0.5%, of a fatty acid ester of dextrin, which ester has an average of not more than 1 1/2 unesterified hydroxyl groups per glucose unit and contains 1/2 -2 saturated fatty acyl groups of 14-22 carbon atoms per group per glucose unit, the balance of the fatty acyl groups being saturated or unsaturated acyl groups of 2-12 carbon atoms per group and/or unsaturated acyl groups of 14-22 carbon atoms. The fatty acyl groups of the dextrin ester may be palmitic and/or acetic acid groups. The fatty acyl groups in the dextrin ester may comprise stearic, monoenoic, dienoic and/or trienoic acid groups. The dextrin ester may be dextrin dipalmitate or monocetyl dipalmitoyl dextrin. Specification 590,737 is referred to.
