Abstract

Simulated meat products are prepared in storable form by mixing stretched, oriented, precipitated protein filaments with a food flavouring and a protein binder, moulding the mixture and causing it to set by heating to not less than 150 DEG F., and dehydrating the set product, preferably after it has been subdivided. Examples are of preparing beef-, chicken-, bacon- and ham-type products. The rehydrated products may be used for bean soup, corn bread, baked potato, pancakes, cheese spreads, salads, salad dressings, spaghetti.
