A freeze drying apparatus comprises a receptacle 1 of a high thermal conductivity material, e.g. aluminium, in the form of a deep-walled tray having a common floor 18 and internal partitions 12, 13 formed integral therewith such that the ratio of height to width of each compartment is between 2 and 5 to 1. As a result the material to be dried, which may be prefrozen or suitably pre-formed, e.g. bar 21, may rest against or face a wall of the compartment to provide for a free escape of vapour into the surrounding drying chamber (not shown), from the upper open end of the compartment from a vapour escape gap 32 between the material and partition 12. In various modifications the rectangular in cross-section compartments may be of trapezoidal or triangular cross-section or have ridges 40, 41, 42 to form vapour escape gaps between the material and the walls and floor, or a coarsely granular bulk material 50 may be dried. In further embodiments, the end walls of the receptacles may be slidable and/or removable, or the upper ends of the walls and partitions may have flanges or strip elements to constrict the upper open ends of the compartments.
