Abstract
The invention comprises edible triglyceride oils comprising tall oil fatty acid triglycerides containing over 70% by weight of triunsaturated triglycerides, the fatty acid constituents of said oil being predominantly unsaturated fatty acids of at least 18 carbon atoms but having substantially no linolenic acid content, and the said oil being substantially free of resin acids and off-flavours and unpleasant odours associated with the tall oil products. They may be prepared by esterifying tall oil fatty acids with glycerol in the presence of a chloride or sulphate of tin or zinc at 200 DEG to 280 DEG C. and preferably in an inert atmosphere. The esterification product may be refined by treatment with sodium hydroxide, washing with water, bleaching with absorbent earth, steam deorodization and, optionally, moderate hydrogenation. One or more antioxidants may be added to the product of the invention to replace those removed in the production of said product.ALSO:Edible triglyceride oils comprising tall oil fatty acid triglycerides containing over 70% by weight of triunsaturated triglycerides, the fatty acid constituents of said oil being predominantly unsaturated fatty acids of at least 18 carbon atoms but having substantially no linolenic acid, are produced by esterifying tall oil acids with glycerol in the presence of a chloride or sulphate of tin or zinc at 200 DEG to 280 DEG C. One or more antioxidants, e.g. a -toco-pherol or butylated hydroxy anisole, may be incorporated in the triglyceride oil product.
