Abstract

1405346 Modifying fats and oils HARBURGER OELWERKE BRINCKMAN & MERGELL 5 Sept 1973 [5 Oct 1972] 41845/73 Heading C5C Tree sterols contained in animal or vegetable oil or fat, e.g. fish-, soya- or sunflower oil are converted into corresponding fatty acid esters by adding to the oil or fat 1À0 to 1À1 equivalents (based on the free sterol content) of a fatty acid ester of a C 1 -C 4 monohydric aliphatic alcohol wherein the fatty acid contains 2 to 26 carbon atoms, and transesterifying the mixture at elevated temperature in the presence of alkali metal or alkali metal alcoholate with simultaneous removal of the monohydric alcohol. The fatty acid ester is preferably the methyl ester of a fatty acid derived from the oil or fat itself. Sterol may be added to the oil or fat before treatment to provide a substantial content of sterol fatty acid ester in the product.
