Abstract
In the treatment of natural juices extracted from sugar containing plants, e.g. cane and beet, buffering matching the natural pH of the juice is effected before clarification or any further treatment. Preferred buffers comprise phosphoric acid and/or a salt thereof. Sodium hydroxide or sodium carbonate together with phosphoric acid may also be used as buffer mixtures. In any subsequent treatment of the juice any additive which increases the pH of the juice is balanced by further phosphoric acid or phosphate addition to ensure that throughout treatment the pH of the juice is held constant at its natural value; for example, when lime is added for clarification purposes, acid, e.g. phosphoric acid, is added simultaneously promoting in situ precipitation of dicalcium phosphate.
