Abstract
In concentrating fruit juice, the juice F1, Fig. 1, flows downwardly through an evaporator P in which vapour S, e.g. steam, stripping volatile essences from the juice, flows upwardly. The essence vapour F3 then passes through a condenser 4 and a scrubber 7. The stripped juice F2 passes through another evaporator 1 to yield concentrated stripped juice 2. The condensed vapours 5 from the condenser 4, and recovered essences 8, from the scrubber, are mixed with the concentrated stripped juice 2. In the evaporator P, the juice F1 may flow down each side of corrugated plates P2, Fig. 2, located between hollow, e.g. corrugated, plates P1 and P3 through which steam is passed. The plates P2 may be provide with punched-out flaps 9, Fig. 3. In an alternative construction of the evaporator P, the plates P1 and P3 are not hollow and steam is passed upwardly between them and the plates P2. <PICT:0954378/C3/1> <PICT:0954378/C3/2> <PICT:0954378/C3/3>
