Abstract

In a process for oxidatively bleaching and/or maturing flour, such as wheat flour used for making bread, an acyclic dihydroperoxide of methyl ethyl ketone (acyclic dimeric methyl ethyl ketone peroxide), e.g. the liquid bis- (1, 11- hydroperoxy 1, 11 ethyl) diethyl peroxide, obtained by reacting methyl ethyl ketone with aquerous hydrogen peroxide at a temperature below 100 DEG C., e.g. in the presence of up to 5% of an acid catalyst, is mixed with the flour, e.g. in an amount equivalent to between 0.001 and 0.006% of hydrogen peroxide, based on the weight of flour. The acyclic dihydroperoxide of methyl ethyl ketone may be mixed with an edible, powered solid carrier, such as calcium sulphate, maize starch, oxidized starch, dextrin, wheat flour, e.g. defatted or heat-treated, wheat gluten and soyabean protein, or it may be blended with water or paraffin.
