[Also in Divisions F4 and G3] A freeze-drying process for treating a watercontaining solid substance is controlled so as to cause a measured electric characteristic of the substance to be maintained constant or to vary in a predetermined manner. A sample of a perishable organic or inorganic solid substance to be freezedried is placed in a glass container 3, Fig. 1, which is, in turn, placed in a sealed enclosure 1 evacuated by a two-stage pump (not shown). The low pressure encourages sublimation of water contained in the substance and control is necessary to prevent an undue fall of temperature in consequence. Current from a D.C. source 5 to electrodes immersed in the substance passes through a device 11 which produces a signal corresponding in magnitude and sense to deviation of the resistivity of the substance from the desired value. The signal from device 11 controls a switching unit 13 to operate a cooler 15 and/or an electric heater 14 as necessary to maintain the resistivity at a desired value. The desired value may remain constant or vary with time according to the setting of a programme device 12. The resistivity is indicated and recorded by devices 9 and 10 respectively. A thermostat (not shown) responsive to the temperature of the substance operates an alarm and prevents further heating when resistivity rises due to lack of water when the substance has been substantially de-hydrated. The Specification refers to control in accordance with the average resistivity of a number of samples. Enclosure 1 may serve for freeze-drying of the main body of the substance itself. The dielectric constant of the substance may be used instead of its resistivity.
