Abstract
A stable self-rising flour comprises an intimate mixture of flour, e.g. 100 parts by weight; salt, e.g. 1.5 to 2.0 parts; bicarbonate of soda, e.g. 1.0 to 1.9 parts; sodium aluminium phosphate, e.g. 1.2 parts of the tetrahydrate; anhydrous monocalcium phosphates, e.g. 0.3 parts, and, if desired, one or more ameliorating, i.e. stabilizing and/or enriching, agents, e.g. less than 1.0 part, the total amount of sodium aluminium phosphate and anhydrous monocalcium phosphate being stoichiometrically equivalent to between 90 and 150% of the bicarbonate of soda. A preferred ameliorating agent is calcium carbonate, 0.25 parts of which may be used for each 100 parts of flour. Other suitable ameliorating agents are: tricalcium phosphate, sodium silicate, water- or alkali-soluble potassium salts, maize starch and urea. Biscuits may be produced by baking a dough prepared from the self-rising flour at temperatures between 300 and 500 DEG F. Specifications 518,737 and 518,738 are referred to.
