Abstract

A pulverulent brown sugar product resistant to caking and useful in confectionery and bakery goods manufacture is produced by drying granular brown sugar, e.g. as described in Specification 930,146, to convert the molasses layer on the sugar crystals to a dry, solid, non-sticky coating, and pulverizing the dried product. The process is conveniently carried out by continuously passing the sugar through a rotary drum type dryer whilst simultaneously passing hot air, e.g. at 175 DEG to 180 DEG F., therethrough; the heated sugar is then cooled in a similar rotary drum dryer through which cool air, e.g. at 80 DEG F., is passed, before being pulverized. A vacuum oven may alternatively be used for drying the sugar.
