In a machine for removing meat skin or bacon rind by a blade 9 against which the meat or bacon is pulled by a toothed feed roll 1, the blade 9 is adjusted by moving its holder 10 to or away from the roll 1 by a lever 25 which on further movement beyond its adjustment path releases the blade and holder so that it can be removed bodily to facilitate machine cleaning. The lever 25 is slidingly keyed on a shaft 20 rotatably mounted in the machine side frames 22 and turns both the shaft 20 and, via a member 30, an eccentric 18 freely engaging thereover and which is journalled in side jaws 14 of the holder 10. To release the holder, the lever 25 is moved axially of the shaft 20 against a spring 27 to disengage from a peg 33 an arcuate slot 34 defining the lever adjustment path, and allow the further lever movement to a position in which the peg 33 engages a locating recess in the lever and the shaft 20 is presented to the openings of the jaws 14 to permit holder removal. During machine operation, yielding of the knife 9 under load is allowed by two spring plugs 36 engaging the holder 10, the eccentric 18 having a bore which is progressively relieved from its centre 41 to its ends to allow the inclusion in such yielding of slight sideways blade tilting. The feed roll 1 has circumferential grooves engaged by teeth of a pivoted stripping plate 8, one groove being deepened and engaged by a tapered tooth extension to ensure location when the plate is moved into engagement with the roll. Such movement is effected by pivoting of a feed table 12 into the almost horizontal operative position shown, when a link 55 turns an arm 56 fast on a shaft 46 eccentrically journalled in the machine frame, the consequent transverse movement of the shaft 46, on which two bearers 44 for the plate 8 are journalled, causing the plate to pivot about an adjustable stop 58. The shaft 46 has flats which align with slots 50 in the bearers 44 when the plate 8 is pivoted oppositely on lowering of the table 12, and allow plate removal for machine cleaning. A rotatable catch 60, 62 retains the table 12 in operative position. The blade 10 may be replaced by one with triangular teeth or by one which is reciprocated in its holder either by pin engagement with a sinuous groove in the feed roll periphery or by a driving motor separate from that driving the feed roll.
