A heat-exchanger is equipped with a number of local temperature signal initiators which are associated with individual places on the heatexchange surface, a means signal initiator which produces a signal representing a mean temperature of the heat-exchange surface and means for controlling the temperature of the heat-exchange surface, and in which the mean signal initiator and the local temperature signal initiator representing the highest temperature can both act on the means for controlling the temperature of the heat-exchange surface, the arrangement being such that the local signal initiator representing the highest temperature is kept inoperative as long as the maximum local temperature remains below a predetermined critical value. In the embodiment shown, steam flows from an inlet 1 through the tubes of 3a, 3b, 3c, 3d to an outlet header 4 and pipe 5. The steam temperature in the outlet pipe 5, which is representative of the mean temperature of the heat-exchange surfaces, is measured by a measuring bar 8 which acts through a lever 9 to position a control valve 11 which controls the supply and exhaust of fluid to a piston power device 16 loaded by a spring 17. Movement of the power device acts through rod 19 and lever 23 to position a valve 7 controlling the feed of water into the inlet pipe 1. Local temperature signal initiator 25, 26, 27, 28 control servomotors 33, 34, 35, 36 in a similar manner but the spring loading of these motors is greater than that for the motor 16 so that the motor controlled by the highest local temperature is only effective to adjust the valve 7 when this temperature exceeds the mean temperature by a predetermined amount. In a modification, an adjustable loading signal may be provided to set the predetermined amount. In a further modification the mean temperature signal controls a valve similar to the valve 7 while the maximum local temperature signal when effective, controls the fuel supply to a burner.
