912,098. Cheese; rotary filters. GERVAIS S.A., CH. Nov. 30, 1960 [Dec. 16, 1959], No. 41116/60. Classes 46 and 84. In a cheese-making vat disposed to turn around a substantially horizontal axis, the peripheral wall or walls of the vat have a non- perforated part and a part provided with a multiplicity of perforations, and there is mounted in the vat a curd cutter formed by equidistantly-spaced parallel plates disposed in planes at right angles to the axis of the vat throughout its entire length, which plates are braced in their portions lying nearest the centre of the vat by curved parallel plates centred on the vat axis. Preferably the width of the spaced parallel plates diminishes from the peripheral wall of the vat towards its axis. Referring to Figs. 1 and 2, a vat 1 is rotatably mounted on rollers 3, of which at least one is connected to a driving mechanism 6 enabling the vat to be turned at an adjustable speed in either direction, if desired automatically. The peripheral wall 1 consists of a heat-jacketed imperforate part 7 and a perforated part 8 fitted to the imperforate part by hinges 9 and bolts 10; preferably the perforated part extends through an angle of not more than 180 degrees and the perforations are of 2 mm. diameter spaced 4 mm. apart. The curd cutter consists of triangular plates 14 braced by plates 15. Exuded whey is collected in a tank 16.
