Abstract
A fused sugar, sugar alcohol or sugar acid is gasified under superatmospheric pressure and then cooled, still under pressure, to form a solid product containing a gas under superatmospheric pressure. Mono-, di- or poly-saccharides may be used, preferably near anhydrous, e.g. glucose, fructose or arabinose; sucrose, lactose or maltose; gentiobiose, cellobiose, panose, malto-triose or malto-tetrose. Sorbitol, mannitol, gluconic acid or saccharic acid may be used. Preferably combinations of sugar are used, e.g. lactose and sucrose. Dextrin, starch, gelatin or a gum, e.g. agar agar, carragheenin, alginates or pectin, may be added. With these additions the resulting product is opaque instead of transparent and lighter than water instead of heavier. Edible acids, e.g. citric acid or lactic acid, buffer salts, e.g. citrates or tartrates, flavourings and colourings may be added. The sugar is heated until it fuses and the gas, e.g. nitrogen, air, ethylene oxide, or helium, but preferably gaseous carbon dioxide is admitted to the system. Solid or liquid carbon dioxide may be used. The product may be prepared continuously or batchwise; otherwise, the gas may be incorporated during extrusion, moulding under pressure or agglomerating.
