[Also in Group XXX] An apparatus for continuous fermentation and drying of processed tea leaf comprises fermentation and drying chambers 1, 2 to which air at the required temperature and humidity is supplied and within which a plurality of trays 9 mounted on endless chains 10 carried on sprockets or the like form horizontal tray runs 6, 7 in each chamber. As shown, chambers 1 and 2 are supplied with the conditioned air through inlets 3 and 4 and the chambers each contain the appropriate number and lengths of tray runs 6, 7 to give the required length of treatment. At the inlet 4, an arrangement may be provided which varies the temperature and humidity of the air flowing to the various runs. The trays 9 may be of aluminium or other non- ferrous metal sheet and are arranged to remain horizontal throughout the two chambers having projections 21 to form a continuous surface (see Group XXX). At the discharge point 23, pairs of cams 24 are provided to disengage projections 21 so that the trays pivot and discharge their contents.
