Dehaired hides and pelts are bated by treating with a liquor containing enzymes derived from micro-organisms in the presence of ammonium salts at a pH of 3-5, the desired pH being achieved principally by the presence in the liquor of one or more water-soluble non- hydroxylic carboxylic acids containing at least three carbon atoms, water soluble hydroxy carboxylic acids containing at least four carbon atoms, or water-soluble non-tanning aryl sulphocarboxylic acids. Preferred acids are propionic, butyric, valeric, α-hydroxyisobutyric, and sulphophthalic acids, and they may be added as the ammonium salts and the acid liberated by a mineral acid such as hydrochloric acid. Other substances which may be added are oligases, dextrose, anhydrous phosphates, trisodium phosphates, urea, amino acids and wetting agents, particularly polyglycol ethers with 4-60 mols. of ethylene oxide to 1 mol. of aliphatic alcohol. In examples, goat, ox or calf skins are bated using mould fungus protease derived from Aspergillus parasiticus in the presence of ammonium chloride and sodium chloride, and optionally of trisodium phosphate. The pH is then adjusted to 4-5 by one of the specified acids.
