Abstract
A composition for applying to foods to form a film serving as protection against fungal attack comprises an aqueous polymer emulsion containing N-n-butylbenzamide. The N-n-butylbenzamide may be in the proportion of 10-20% of the polymer. The foods treated are exemplified by cheese of the "melted" or "pressed" type, sausage, ham, bread, citrus fruits, apples, pears, and bananas. The examples are concerned with dipping cheeses in N-n-butylbenzamide-containing aqueous dispersions of polyvinyl acetate and of a vinyl chloride-vinyl acetate copolymer of 85% vinyl chloride content and allowing the adhering dispersion to dry. Pigments and fillers such as calcium sulphate, barium sulphate, and talc may be included in the emulsions. The emulsions may contain a plasticizer such as triacetin, tributyl acetyl citrate, butyl stearate, dibutyl adipate, dibutyl sebacate, 2-ethylhexyldiphenyl phosphate; the emulsions may be thickened by sodium cellulose glycolate, sodium polyacrylate, or methyl cellulose.
