Abstract
Maintenance of colour in packaged cuts of beef, lamb, pork and veal is prolonged by employment of a bag, wrapper or coating of a transparent, oxygen-pervious material containing, or coated with, an antibiotic which prevents the multiplication of aerobic bacteria on the surface of the meat. In hydrophobic wrappers of rubber hydrochloride, polyvinyl chloride, polyvinyl chloride-acetate, vinylidene chloride-vinyl chloride copolymer and polyethylene, an antibiotic soluble in organic solvents, e.g. chlortetracycline, may be used; in hydrophilic wrappers of plasticized regenerated cellulose, gelatine, hydroxyethyl cellulose, polyvinyl alcohol, pectin, modified starch and glassine paper, a water-soluble antibiotic, e.g. chlortetracycline hydrochloride, may be used.
