Abstract

The production of a puffed, ready-to-eat cereal product involves drying small shapes of an uncooked cereal e.g. maize, wheat, rice or oat, dough to a moisture content of below 16% by heating, the time and temperature of drying being so correlated that the starch granules of material, viewed microscopically under polarized light, show a substantial loss of Maltese crosses, but retain their shape and are largely unruptured, and gun-puffing the dried dough shapes to pieces several times larger than, but of the same configuration as, the original dried pieces. The moist dough may contain 5-50% of pregelatinized farinaceous material, e.g. pregelatinized maize, oxidized maize, waxy maize, tapioca or potato starch. The dough may have 20-50% moisture content. Drying of the shapes before puffing may be at 250-400 DEG F. to 3-16% moisture content. Sugar, salt, malt, vanilla, defatted soya bean, wheat germ, wheat gluten or dried skim milk may be incorporated. U.S.A. Specification 2,196,304 and 2,333,442 are referred to.
