830,498. Frying apparatus. CRUICKSHANK, J. E. Dec. 4, 1957 [Sept. 5, 1956; Jan. 30, 1957], Nos. 27081/56 and 3221/57. Class 28 (1). Potato crisps or the like are cooked in an apparatus comprising main and secondary containers 1, 5 for fat or oil connected by a valve controlled conduit 6 through which the surplus fat or oil returns from the main to the secondary container from which it is with drawn by a pump 8 and fed back through jets 9 to the main container, the latter having an endless gauze belt 2 with its lower run below the surface of the fat or oil and above part of the upper run of a second endless gauze belt 20 which moves along therewith to prevent potato or the like from settling on the bottom of the container. The jets 9 are mounted on a pipe 10 disposed across the vat and adjustably connected to brackets 11. The slices or the like are fed to vat 1 by e.g. a vibrating conveyer. Vat 1 has a cover 12 connected by a conduit 13 to a flue, the sides of the cover resting in troughs 14. The fat or oil is heated by gas burners from which the fumes pass through openings 19 into ducts 15 connected by conduits 16 to a fan 17.
