[Also in Group XXIX] Coffee, coffee substitutes, &c., are roasted by suspension in an upward current of hot gas, the temperature of which is continuously varied according to requirements by addition of one or more gases of different temperature, e.g. constant temperature air for roasting coffee may be partly replaced by carbon dioxide or nitrogen of lower temperature. With the apparatus of Fig. 4, the temperature of air delivered to the roaster 32 is controlled by diverting part of the gas through a line 11 to by-pass the heater 29 in line 10 and the desired proportion of hot and cool gases is regulated by movement of a rod 18 operating throttle valves 12, 13 in the pipe-lines 10, 11 respectively, the lengths of the levers 17, 19, 15, 18, 16 and position of the pivot 21 being adjustable.
