Abstract
A method of continuously rendering fats comprises coarsely grinding the fatty tissue, for example to a particle size of 1/8 -\ba5/8 inch, and then heating the ground tissue, in a vessel open to the atmosphere, to a temperature not high enough to coagulate the protein in the tissue, but sufficient to melt the fat, suitably 100-120 DEG F. Thereafter the fluid material is continuously pumped to a second heating zone where it is raised to a temperature high enough to coagulate the protein, suitably 160-170 DEG F., and is then ground to a sub-cellular non-fibrous state with a particle size of 50-100 microns, and finally centrifuged while a temperature of 150-200 DEG F. is maintained so as to separate the fat from coagulated protein and water.
