Abstract

Sugar for diabetics is obtained from saccharose, especially beet or cane sugar, by heating the saccharose so that it becomes plastic whilst continuously stirring to avoid local overheating, the heating being continued until the sugar nears the point of caramelization and puffs up, discontinuing heating but continuing stirring for 10 minutes when the temperature of the pulp attains 150 DEG C., cooling to congeal the product and then grinding it. The sugar may be mixed with oxygen and an inert gas or with azonic air and treated with ultra-violet radiations.
