Abstract

The process of the parent Specification is modified by adding water to the mashed potato to decrease the solids content significantly, but not below 18 per cent, before dehydration is undertaken, the product obtained being drier and of greater bulk density, and having a greater proportion of flakes which pass through a screen with holes 15/16 in square but not a screen with holes 7/16 in. square.
