Abstract
In preparing packages of cooked poultry, especially ducklings, the freshly dressed fowl is subjected to treatment which comprises placing in a wrapper and pressing to rectangular block form, cooking in the wrapper and then deep-freezing without removal from the wrapper, and subsequently packaging together with the wrapper. Pressing to block form may be effected by pressing the wrapped fowl into a rectangular box before or after the cooking. The wrapper may be folded aluminium foil or a box of suitable plastic, e.g. polyethylene. Cooking may be in high frequency electric field. The deep-frozen wrapped fowl is preferably sealed in a wrapping of cellulosic foil before the packaging.
