Abstract

For colouring butter during its production there are employed tablets of 15 per cent. of a mixture of equal parts of the oil-soluble, water-insoluble FD & C Yellows Nos. 3 and 4 with 85 per cent. of maize, potato, rice or wheat starch or with 40 per cent. or more of starch and 45 per cent or less of sodium bicarbonate compressed to a density of at least 1g. per cubic cm. The tablets are dispersed in water which is not hot enough to gelatinize the starch and the dispersion is added to pasteurized cream before the churning.ALSO:For dissolving or dispersing an ingredient in liquid or semi-liquid medium there are employed tablets of a mixture of the ingredient with starch compressed to a density of at least one gram per cubic centimetre. Examples are of such tablets made from 15 per cent. of a mixture of equal parts of FD & C Yellows Nos. 3 and 4 with 85 per cent. of maize, potato, rice or wheat starch or with 40 per cent. or more of starch and 45 per cent. or less of sodium bicarbonate. These tablets may be employed for colouring butter during its production, the tablets being dispersed in water which is not hot enough to gelatinize the starch and the dispersion being added to the pasteurized cream before the churning.
