Class 51 (2) In a baker's oven in which the comestibles pass through baking zones heated directly and/or indirectly by combustion gases in a substantially closed cycle, a conveyer 11 passes between a succession of heating elements each comprising a number of superposed flow and return heating ducts 15 and 14 with fan chambers 22 and oil or gas burners 16 with shields 20 as in Specification 665,767, dampers 23 being provided to direct the hot gases either through the heating ducts 14 or through the baking chamber zone 13 or both. Auxiliary dampers 27 are provided to vary the flow from the ducts 15 into the baking zone when the dampers 23 close the ducts 14, and dampers 24 and 25 are provided in the ducts 14 and in the baking zone 13 respectively to control the passage of the gases back to the fan chambers 22. Further dampers 28 in the ducts 15 control the overspill of the circulating gases to a duct 29 and controlled outlets 30 enable baking steam to be exhausted through ducts 31, 32 by a fan 33. Pivoted deflectors 34 are provided at intervals along the baking zones 13 to direct the hot gases on to the food. In a modification, Fig. 4a (not shown); fans disposed in the middle of each oven section blow heating gases in opposite directions. Another modification, Fig. 5 (not shown) has a dual discharge fan unit in the middle of an oven section, discharging into flow ducts extending across the width of the oven and enclosing return ducts, dampered openings being provided at intervals to direct heating gases into the oven chamber as required.
