Abstract

In making dry gelatinized starch compositions which form blancmanges at once on addition of liquid, particles of pregelatinized starch prepared in accordance with the method of the parent Specification are mixed with a hydrophobic agent and a sweetening agent. According to examples, hydrogenated cottonseed oil, cottonseed oil, lard, paraffin wax, corn oil, olive oil, or cocoa butter, sucrose, and vanilla, butterscotch or lemon flavouring are incorporated into pre-gelatinized starch of particle size 5, 10, 17 or 150 microns prepared by heating and drying a mixture of blancmange starch, sucrose, and, if desired, calcium chloride, and water.
