Abstract

686,035. Cheese. IMPERIAL COLD STORAGE & SUPPLY CO., Ltd. June 19, 1950 [June 24, 1949]. No. 15281/50. Class 84. Cheese is manufactured continuously by passing vessels 2 on an endless conveyer 1 under spouts 4, 5 and 6 from which measured quantities of milk, starter and coagulant are fed respectively, cutting the coagulated mass in the vessels by a cutter 14 operated vertically, tipping the contents into a hopper 17 provided with a preferably inclined floor filter 18 for drainage, the whey being removed by a discharge pipe 19 and the curd being passed by a worm 25 into an open ended cylindrical drum 20 rotatable on a hollow shaft 22 on which also is mounted the worm 25 and whose peripheral surface is constructed as a filter enclosed by a casing 28 provided with a heating coil 30 for drying the curd (heat may also be circulated through the hollow shaft for this purpose) and a drain 29. The curd is fed through the drum by the blades 26 mounted in the shaft 22 on rotation, the curd being also subjected to a centrifuging effect, discharging at 27 into a receiver 31 where it is macerated by a beater 32, and then intermittently discharging via a damper 33 into a cylinder 34 where it is compressed by a piston 35 into a mould 37.
