Abstract
Edible jellies are made by boiling an aqueous solution containing a water-soluble alginate, e.g. sodium, potassium or magnesium alginate, an alkali metal phosphate glass, e.g. a phosphate glass in which the mol ratio of alkali metal oxide to P2O5 is between 0.7 and 1.7, a sodium phosphate glass in which this ratio is 1.1 being preferred, and a calcium salt soluble in water containing such phosphate, e.g. calcium citrate, acetate, tartrate, chloride or saccharate, and then jellying by adding an edible acid, e.g. citric, tartaric, lactic, malic or phosphoric acid. The alginate, phosphate and calcium salt may be mixed dry before dissolving in water. Sugar, e.g. corn syrup, fruit or a fruit juice, a higher fatty acid or salt thereof, e.g. stearic acid or calcium stearate, may be added. Specification 555,940 is referred to.
