Abstract
<PICT:0595597/III/1> Volatile constituents in fruit juices, milk and in vinegar are separated in an apparatus comprising a vessel 11 containing pairs of superposed conical plates disposed alternately in upright and inverted positions so that the lower plate of each pair projects radially beyond the upper plate, a spray ring 23 symmetrically placed above the plates, and an external heater 29 through which the liquid to be treated is passed before it is distributed over the topmost plate by the spray ring. Each conical plate is provided with a central aperture so that the vapours of the volatile constituents can escape unimpeded to the outlet 24 and from thence to the condenser 26 and receiver 28. The apparatus is placed under reduced pressure by means of connection 33. The concentrated liquid discharged is cooled in heat exchanger 34 which is connected to either of two vacuum receivers through pipe 35. The condensed volatile constituents may be returned to the concentrated liquid if desired. The apparatus may also be used for removing water from edible oils or butter.
