Abstract

575,160. Vitamin-containing milk food product. HAUSER, C. G., MILLER, H. J., and BIERBAUM, H. D. Oct. 13, 1943, No. 16815. [Class 49] A milk food product containing vitamins A and D is obtained by agitating a mixture of skim milk and vegetable oil, heated to a temperature of about 210‹F. to form an emulsion, then introducing the heated emulsion into a chamber under such a degree of vacuum as to produce violent ebullition and a lowering of the temperature of the emulsion to about 130‹F. resulting in withdrawal of water vapour from the emulsion and during this period of agitation, introducing an oily concentrate of the vitamins, e.g. cod liver oiL Steam is bubbled into a mixture, in well 1, of skim milk and coconut oil, in quantity sufficient to take the place of the natural cream, to raise the temperature to 210‹F. and form an emulsion. On opening valve 4 the emulsion enters tank 2 in which is a vacuum, e.g. of 26in. mercury, and which is preferably heated by steam coils to approximately 130‹F. During the agitation of the emulsion in tank 2, the desired amount of vitamin A and D concentrate is run in from a graduated container 6. The mixture is pumped through an homogenizer 9 and thence through pipe 26 to a cooling system.
