Abstract
574,807. Butter substitutes. WILLIAMS, W. P. (Procter & Gamble Co.) April 22, 1943, No. 6529. [Class 84] [Also in Group III] Rearrangement of the acid radicles in the triglyceride molecules of animal, vegetable or marine fats or fatty oils is effected by bringing the fats or fatty oils or mixtures thereof in the presence of a molecular rearrangement catalyst to a temperature at which at least a portion of the glycerides are molten and at which solid glycerides which are predominantly saturated glycerides will crystallise out. The modified fat thus produced, if desired with the addition of unmodified fat, may be used in shortening or the modified fat may be fractionated by crystallisation and the solid fraction used as a confectioner's fat. Fats and fatty oils mentioned are tallow, whale oil, fish oils, cottonseed oil, coconut oil, palm oil, palm kernel oil and soya bean oil, while molecular rearrangement catalysts referred to are alkoxides of sodium, potassium, aluminium, magnesium or zinc including methoxides, ethoxides, propoxides and alkoxides derived from lauryl alcohol or oleic acid monoglyceride.
