Abstract
548,836. Milk preparations. WEST OF SCOTLAND AGRICULTURAL COLLEGE, SMILLIE, D. M., and WIGHT, J. May 14, 1941. No. 6207. [Class 49] Milk whey is heated to precipitate the soluble proteins, and the precipitate and one-sixth to oneeighth of the whey liquid are separated out, mixed and homogenized to form a milk-like product. The homogenization may be performed by forcing the mixture through a constriction. The heating may be to 200‹F. Before heating, the residual butter fat may be removed from the whey. After homogenization the product may be subjected to lactic acid fermentation to form a buttermilk substitute.
