543,706. Treating animal or vegetable solutions and dispersions with radiations. REID, C. June 12, 1940, No. 10215. [Class 1 (i)] [Also in Group VI] Animal and vegetable solutions and dispersions such as milk, fruit juices, wines, vegetable oils, and beverages are improved as to their keeping qualities or flavour by subjecting them to an intermittent electrical potential not exceeding 5 volts so as to produce very small currents measured by micro-amps without substantial increase in temperature, the action being to increase the negative energy on the suspended particles between a lower limit at which aggregation of the particles would begin and an upper limit at which self decomposition or electrolysis would begin. For this purpose, the liquids are passed through a tube 1, Fig. 1, insulated from the pipe line in which it is situated, and over an electrode element 6 connected to. but separated from, the liquid by a shield 8 of metal such as stainless steel which cannot be ionized by the weak currents used. The element 6 is connected by a lead 7 to one terminal of a source of alternating current of 50 cycles per second, of from 100 700 micro-amps strength and from ¢ to 2 volts. The shield 8 has an external surface of from 50-100 square inches, and, in the case of treating milk, a rate of flow of 1 gallon per minute will give an adequate treatment for freshening the milk and preventing coagulation. In the case of cream, a higher current density would be maintained. The tube 1 may be connected to the other terminal of the alternating current supply, or it may be earthed. In another method of treatment, the liquid is passed. through a chamber 10, Fig. 2, made of insulating material and having two sets of plates 11, 12, the former being connected to one side of a source of alternating electric potential while the latter are connected to earth.
