509,476. Yeast preparations. COMPAGNIE INTERNATIONALE DE PROCEDES DE PANIFICATION ITAM, and SOC. FOULD-SPRINGER. Jan. 14, 1938, Nos. 1371 and 1372. Convention dates, Jan. 14, 1937, and Dec. 24, 1937. [Classes 14 (ii) and 49] Yeast is preserved in a state of reduced activity by admixing therewith sugar and a neutral or feebly acid salt such as sodium chloride without any subsequent drying. The proportions may be yeast 1000, sugar 100 to 800 and salt 100 to 800 gms. Flour, starch or vegetable glues may be added to produce a pasty mixture. The mixture may be used in bread making, reduction in the quantity of mixture used being accompanied by an increase in raising time, e.g. to 12 to 18 hours. Thus a dough can be made and allowed to ferment all night ready for morning baking.
