Abstract

Dispersing agents are prepared by combining a polyglycerol with a polymerized higher fatty acid by esterification or re-esterification of the polyglycerol with polymerized higher fatty acids or their esters or with unsaturated higher fatty acids or their esters, in which latter case the esterification is followed by polymerization. The polymerized fatty acids may also be oxidized before or after esterification. Non-polymerized and non-oxidized fatty acids may also be present during the combination of the polymerized fatty acids. In examples: (1) glycerol is converted in polyglycerol by heating in the presence of sodium acetate and an inert gas, the product heated with soya oil, the product then polymerized and oxidized, and the final product, mixed with molten cotton seed oil and coconut oil, has skim milk, bacterially acidified, dispersed in it to yield, after cooling and plastifying, a margarine; (2) hydroxyl containing esters in the dispersing agent made according to example 1 are removed by treatment with ethyl alcohol and used alone as dispersing agents; (3) polyglycerol is heated with the dispersing agent prepared according to Specification 187,298, [Class 91]; (4) the fatty acids derived from the undiluted, gelatinized polymerized and oxidized soya oil (Specification 187,299, [Class 81 (i)], is esterified with polyglycerol. The dispersing agents are suitable for the manufacture of margarines or shortenings of the water-in-oil type, and for the manufacture of oil-in-water dispersions.ALSO:Dispersing - agents are prepared by combining a polyglycerol with a polymerized higher fatty acid by esterification or re-esterification of the polyglycerol with polymerized higher fatty acids or their esters or with unsaturated higher fatty acids or their esters, in which latter case the esterification is followed by polymerization. The polymerized fatty acids may also be oxidized before or after esterification. Non-polymerized and non-oxidized fatty acids may also be present during the combination of the polymerized fatty acids. In examples: (1) glycerol is converted into polyglycerine by heating in the presence of sodium acetate and an inert gas, the product heated with soya oil, the product then polymerized and oxidized, and the final product, mixed with molten cottonseed oil and coconut oil, has skim milk, bacterially acidified, dispersed in it to yield, after cooling and plastifying, a margarine; (2) the hydroxyl-containing esters in the dispersing-agent made according to example 1 are removed by treatment with ethyl alcohol and used alone as dispersing-agents; (3) polyglycerol is heated with the dispersing-agent prepared according to Specification 187,298, [Class 91]; (4) the fatty acids derived from the undiluted gelatinized, polymerized and oxidized soya oil (Specification 187,299, [Class 81 (i)]) is esterified with polyglycerol. The dispersing-agents are suitable for the manufacture of margarines or shortenings of the water-in-oil type, and for the manufacture of oil-in-water dispersions.ALSO:Dispersing agents for use in the manufacture of margarine or shortenings of the water-in-oil type and for the manufacture of oil-in-water dispersions are prepared by combining a polyglycerol with a polymerized higher fatty acid by esterification or re-esterification of the polyglycerol with polymerized higher fatty acids or their esters or with unsaturated higher fatty acids or their esters, in which latter case the esterification is followed by polymerization. The polymerized fatty acids may also be oxidized before or after esterification.
