Abstract

Bran, substantially free from loose flour, is roasted in a rotary cylinder at a temperature of approximately 310-315 DEG F. for three to six minutes to dextrinize partially the adhering starch and is removed and quickly cooled by a blast of cold air. The roasted bran mixed with water containing sugar and salt is placed in a rotary steam cooker and cooked by steam under a pressure of about fifteen pounds per square inch. The cooked bran may be transferred to a drying vat where it is stirred in a blast of hot air until its moisture content falls to about twenty per cent after which it is tempered for eighteen hours in an airtight bin: the tempered bran is then steamed. The cooked bran, whether or not submitted to the last treatment, is fed in a fine uniform stream between flaking rolls the resulting flakes being passed into a rotary toasting oven where they are heated by air at a temperature of about 500 DEG F.
